I was surprised to learn that the Darlings played Dueling Banjos on the Andy Griffith Show a good ten years before it was made famous by its appearance in Deliverance. I had thought it was written for the movie.

Why is her name so commonly spelled “Aunt Bee” instead of “Aunt Bea”?

Given that even IMDb calls her that, I suspect it’s how her name was spelled in the scripts. It’s also spelled that way in the closed captions.
