Rabbit is excellent. I also love buffalo which is super lean and caribou which is super fatty. Yummers

I have trouble thinking of rabbit as “exotic”. When I was a kid we raised rabbits in the back yard for meat. At one time we had more than 200. Dad gave lots of rabbit meat away to friends and family. He did not butcher them in the house, though. He did it out back by the garden, where the gross parts went to help feed the plants.
You might give the state meat inspection office a call, http://www.vdacs.virginia.gov/meat&poultry/. Presuming there is any rabbit processed in Virginia, they can put you in touch with the processor. Same goes for any “exotic” meat processed and inspected in the state. Could be an interesting list.
There’s a chain of international “farmer’s” markets here. Just a large Asian/etc. food market with lots of fresh produce, etc. Many non-standard meats. I spotted their whole rabbits just last week. It always gives me the heebie-jeebies because of Repulsion. I’m never going to try just because of that movie.
Dunno if they do rabbits, but I received a pound of artisanal bacon from this place in the holiday white elephant swap at work. Yummynums.
This thread has made me want to check out our local International Food Market that just opened up by my house.
We do have a kitchen, but there’s no TV in there, and he wanted to watch TV while he butchered the squirrel. We also have a garage, which is where he butchered the first deer that he shot.
I’m not sure that I’d really want anything butchered in my kitchen. Have I mentioned how much butchering STINKS?
This is a good point. Try Grand Mart (Korean supermarket chain – lots of locations including Alexandria and Falls Church). I think I’ve seen rabbit there.
