Frozen Custard vs Ice Cream whats the difference?

We have three Shake’s Frozen Custard locations in my area. It’s a franchise. Five states so far.

Quite good. We usually get a scoop in a cup. Unless we indulge in a Sundee with pecans. :wink: The texture reminds me of the Tastee Freez ice cream when I was a kid.

How is frozen custard different from ice cream?

The main difference I’ve noticed is the texture. No ice crystals in it and its a very silky smooth texture. It seems to have a stronger taste than typical soft serve from Sonic.

I’m sure theres more differences.

Egg yolks make that much difference? OK that smooth texture may be from how they make it. I know its made fresh at each location.

Also, much less air in the mix than ice cream or that Dairy Queen soft serve stuff.

I’ve never seen frozen custard served by the scoop-- Everywhere I’ve seen it, it’s always been soft serve.

Higher butterfat content in custard, I believe.

I may have misspoke in the OP. I’m not sure if the frozen custard at Shake’s is scooped or comes out of their machine. Its rounded. So I just say a scoop in dish. But I’ve never seen how the clerk gets it. I can’t see inside the work area from their drive thru.
