Hi, I need help for work. Can somebody indicate to me where I could find the nutritional composition (the amount and identity of the various minerals, vitamins, oils, etc.) that are in fugu. My Google-fu is usually very good but I can’t find anything about it. Thanks in advance !
I think you’d have to find the “nominal” composition of the specific fish species used. Wikipedia lists several that may be used:

Fugu (河豚, 鰒, フグ?) is the Japanese word for pufferfish and is also a Japanese dish prepared from the meat of pufferfish (normally species of Takifugu, Lagocephalus, or Sphoeroides) or porcupinefish of the genus Diodon.

I dunno, maybe some governmental web site might have the information for some of these species. You might be in for a protracted search.
Sorry, should have been more specific. I am looking specifically for Takifugu rubripes, although I would take info for other ones also as long as they are identified.
This PDF has some info:

Nothing about vitamins, though.
Thanks Nametag, that’s exactly the kind of information my boss is looking for ! And don’t worry about the missing parts, what you provided is 1000 time more than what I was able to find.
