Ginger Salad Dressing Recipes

I’m trying to duplicate the ginger dressing recipe used by a faux Japanese place in town. The dressing is very light, without a hint of vinegar (which seems to be a major component of the recipes that google turns up), and is yellow/orangish in color. Anybody have any suggestions?

1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice vinegar
2 tablespoons water
2 tablespoons minced fresh ginger
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
Combine all ingredients in a blender. Blend on high speed for about 30 seconds or until all of the ginger is well-pureed.

Makes 1 3/4 cups

Nope. That’s not it. Saw that one on google before I posted this thread.

The one I like is much more simple.

Grated carrott
Grated ginger
Rice wine vinegar.

Simple, fat free, utterly delicious.

BTW Tuckerfan, rice wine vinegar is so mild and sweet it hardly has any vinegar-y taste. I would bet that the dressing you had did have rice wine vinegar in it.

I’ve been trying permutations on sesame oil, olive oil, ginger, soy sauce and rice vinegar. I was using good stuff from the Oriental grocery except the rice vinegar from Kroger. Made in Iowa or something. :).

My brother the chef has been trying to replicate a similar dressing from a local japanese place also. He made a passable version a couple of weekends ago-it definitely has carrot and a touch of rice vinegar. The carrot adds a nice sweetness and the orangey color. However, the exact proportions and ingredients I can’t say… 'cause he didn’t.

Try:

5 parts soy sauce

1-2 parts brown sugar

1-2 parts xao xing* or mirin**

1 part roasted sesame oil

1 part sake

½ part finely grated ginger

½ part crushed garlic

½ part minced scallions

1 dash onion powder

1-2 drops House Rayu roasted sesame chili oil
*Chinese rice wine

** Sweet Japanese rice wine
