I’d just like to say that, thanks to this thread, I can once again make a decent grilled cheese sandwich. I had no idea that the spread I was using was what was giving me such dismal results. I bought a package of real butter and it made all the difference in the world. Funny thing, I tried the butter on a piece of ordinary toast, and didn’t care for it at all.
Oh, that sounds so good! I could make that. Have you made the recipe? The only thing I question is the black coffee. I’m so not a coffee fan. Can you taste it strongly?

I am not sure whether or not we used black coffee to make the jam. I don’t think it’s essential.

Early on in the thread I was a proponent of the gourmet grilled cheese sandwiches. Artisan bread, good cheese, and complimentary toppings. But this thread put the old standby in my head of white bread and American cheese - the classic original my Mom used to make. I made one of those a couple of weeks ago and man was it ever good. Crispy and gooey at the same time. For comfort food you just can’t beat it. I still prefer the gourmet, but I’m going to make the classic more often too.
… and it only took us five pages!
I just want to say, I love being a part of a community that can argue the nuances and details of such a simple, ordinary item for so long.
Grilled cheese deserves it!
When I was a kid there were foods that were pretty much trash. We got burgers at McDonalds, pizza at Domino’s, and tacos at Taco Bell. All foods relegated to pimply faced teenagers* following procedures, not recipes. Grilled cheese is what we ate at home when we were in a rush.
But now the trend is for real chefs to revisit these foods. There are gourmet burgers, honest to God sit down Pizza places (one local place is charging $1000 for a side of ranch dressing), and tacos that make me weep. There’s a place by my office called Torchy’s Taco’s that I’d choose as my last meal should I find myself on death row.
Which of these deserves their own thread next? Who would win in the comfort food showdown?
*I was a pimply faced teenager flipping burgers at Jack in the Box

Maybe it’s the fair amount of alcohol I’ve consumed in the last couple of hours that’s speaking, but I feel compelled to say that every time I think of the Love of My Life (the One Who Got Away back in 1975), I see her sitting next to me on the couch on a rainy June afternoon, consuming a grilled cheese sandwich that oozes melted Velveeta…
