The thing is, although they’re just three people (including their son), if they were to be bombed or whatever there would likely be a lot of collateral damage. The deputy Governor General is by definition the Chief Justice of the Supreme Court, so he can’t be that either.

In quoting from the Wikipedia article, you don’t quote from the letter from the Queen’s Private Secretary, in which he states that it is the Palace’s understanding that the Constitution of Australia assigns the power to commission and dismiss governments to the Governor General alone, not to the Queen, and that Her Majesty had taken no steps in relation to the events in Australia.
In the Commonwealth realms, the Gov Gen has the power to dismiss a government under their respective constitutions, written by each Commonwealth nation. That power is an emergency power and very rarely used, but it is a constitutional power, not a power of the Mountbatten-Windsors.
In the Westminster systems of government used in the Commonwealth realms, the fundamental duty of a government is to pass the budget (“Supply”) and ensure government is continued. If a government cannot ensure supply, it either has to resign and let someone else form a government, or call an election. PM Whitlam could not get his budget passed; did not resign; and did not call an election. Indeed, there was some evidence that he was trying to borrow money on the international markets, without legal authority to do so, in the expectation that he would later get Parliament to ratify that illegal borrowing. Governor General Kerr concluded that the Prime Minister was in breach of the fundamental principles of the Australian government system, and exercised his authority, given to him by the Constitution of Australia, to dismiss the government.
That wasn’t Betty Windsor overthrowing a government. That was the Governor General of Australia exercising his constitutional powers in what he deemed to be an emergency.

It wouldn’t be an appointment by the British government. It would be an appointment by the Queen of Canada, on the advice of her Canadian government. The British government would have no role in the appointment.
