Has anybody used silicone bakeware?

I saw some for the first time today, and was wondering how good it is. It says you can put it in the regular oven as well as the microwave. It looks like it would be too floppy to hold anything heavy like a caserole in it’s precooked form. Also, I wonder if there’s an odor when it gets hot. A few years ago, they came out with plastic microwave dishes that could also be used in the oven. But it stank when it got hot and made the food taste funny.

Silicone Bakeware

I bought a silicone loaf pan but haven’t used it yet. The instructions do say to put it on a cookie sheet or something. I can’t imagine handling the muffin pan full of batter without something rigid underneath

I have a few of the square silicone hot pads and I love them.

My wife bought a cake mould and some muffin… um tins - they are really good, but weird and frightening to use - they just seem too floppy and delicate, but they do actually stand up to oven temperatures without flinching (obviously)

I’ve only used Silpats (the silicone baking sheets) – you put them on a regular baking sheet because of the “floppy” factor.

Cookies come out incredible – no singed bottoms, no scraping, nothing

I have a mini muffin pan. I’ve only used it a couple times but it seems to cook okay. You do have to use it on a cookie sheet though. I haven’t noticed any odor when it cooks. I’d say it’s about as much trouble to clean as a non-stick pan. The advantage is probably storage since you can supposedly roll them up and they will still retain their shape.

The only issue I have had is that you don’t get a firm crunchy crust on anything using the silicon. However, the non-stick aspect is pretty amazing. And yes, it’s best if you use a cookie sheet to support it when it is full of anything liquid.
