Has anyone used a mail-order knife sharpening service?

I would like to get some of my kitchen knives (in particular my 8" Global chef’s knife) sharpened professionally, since I am not very good at doing it myself. Unfortunately, I live in the deep sticks, so there’s no one around here who does it (at least no one I would trust).

I’ve seen a few mail-order services that do it, but I don’t know anyone who has used them, so I don’t know if I should trust them either. Has anyone done this?

I’ve never used one of those services so can’t comment on that, but I do have a set of three Global knives and am quite pleased with all three. So I understand your concerns.

How bad has the edge gotten? I generally sharpen all my knives and other edged tools with a Tormek wet wheel sharpener, but for daily touchups I use a Smith’s sharpener. http://www.elinemerchandising.com/S-2002.html . I bought mine at Lowe’s and was quite suprised by how well it works. I generally touch up the edge after the knife is cleaned and before it goes back into storage. If the Smith’s doesn’t do the job, I bring out the Tormek.
