Help me create a cookie!

I was in Trader Joe’s yesterday and they had some Toasted Coconut Thin cookies. They are just plain, with a good strong coconutty flavor, and as I was standing there in line, I thought they would be so good sandwiched together with some sort of filling for a reception I’m doing next Sunday. But I can’t decide what kind of filling to do. So I turn to the amazing creative cooks of the Dope to help me concoct a filling!

Any ideas?

Chocolate ganache? Lemon curd?

Making this up as I go along:

  1. Get some marshmellow creme.
  2. Form patties about the size of the cookies and cool them.
  3. Melt some milk chocolate.
  4. Dip the patties.*
  5. Make your sandwiches.

*Alternatively, you could reverse steps 4-5 and dip the whole sandwich.

If you’re looking for something simple, get a jar of pineapple jam and use it as the filling in some coconut cookie sandwiches. Coconut and pineapple are always a good combination.

You put the lime in the coconut.

Nutella. The answer to of “what can I sandwich between these two to make them better?” is always Nutella.

Pineapple filling of some kind - Piña Colada cookies!
