Help me find this chclate fudge frosting recipe please!

The frosting, when cool, comes out pretty much like fudge in consistency – a thick layer like soft clay, much firmer than regular buttercream or something.

There are quite a lot of “chocoate fudge frosting” recipes online, and I would prefer to get the recipe from someone who has made it and can tell me for sure.

Have you tried ganache? There are a million “recipes” for it, but it is basically cream and great chocolate. If you want it to be more like buttercream frosting, you whip it before using.

A lot of the recipes online are either a butter cream that melted chocolate or cocoa are added to and I would think are just fluffy. The others seem to want to add cream cheese, condensed milk or to make what is actually fudge.

I do have an icing recipe that sound like what you are looking for except I never did write down the actual proportions and usually eyeball it and go by texture and colour, but it does come out fudgey.

Put approximately 2 Tbsp of butter in a saucepan and melt it. Add about 1/3 cup of cocoa in the pan and mix. You want to leave it on the heat to “cook” it a little bit. It will look like a crumbly greasy mess. Add about 1 cup of icing sugar and mix. it will now look like a white and brown crumbly mess. Start adding milk, or cream, or sour cream in small amounts and mix. It will gradually mix into a more fudgey mess. you can tweak the sugar but be warned, the more sugar you add the paler and sweeter it gets and it loses its fudgeyness. This amount is enough to cover a 9 X 13 pan of brownies so i am not sure how to increase it to cover a two layer cake or such. Hope this helps

I’m afraid I do like roxie and play it by ear, with a variation of the filling I use for Chocolate Silk Pie.

Partly melt a couple squares of baking chocolate in the microwave, then add a stick of butter and melt the two together. Add in about a cup of powdered sugar until the consistency is about right for frosting. Finish by whipping in a little milk/cream to smooth it, and a couple tablespoons coffee if desired.
