Because I already bought the pizza sauce! I’m adventurous, but I still like my pizza to taste a little traditional. I once went to some Wolfgang Puck restaurant that specialized in gourmet pizzas. It was the first time I had pizza with slices of tomato. It was horrible! I actually don’t like raw tomatos too much except in salsa or in sauce form, so I can’t do that. And yuck, hate feta!
Wouldn’t the olive oil make it too greasy though? My cheese is that round ball of mozarella. I LOVE mozarella!
A drizzle of high-quality extra virgin olive oil at the end is a somewhat standard flourish for an Italian-style pizza. You don’t need a whole lot, but it does add a nice element to the flavor. Now, if you’re covering the pizza in a shell of cheese, the oil will be grease overkill. But if you add a sensible amount of cheese, it’ll be fine.
