The seasons have loose story-arcs, but it had a format more or less like X-Files - Immortal of the Week episodes interspersed among Mythology episodes.
Seasons 1, 2, and 6, you can pretty much skip the Mythology episodes, and not miss anything terribly worth watching (I recommend it for Season 6). The Kalas and Horsemen arcs (Seasons 3 and 5) are pretty good, though.
I can’t suggest particular episodes off the top of my head, and I’m too lazy to look through episode guides and try to match titles to memories. But some guidelines:

[li]If Fitzcairn (Roger Daltry) is in it, it’ll be a good episode.[/li][li]If Methos (Peter Wingfield) or Amanda (Elizabeth Gracen) are in it, chances are it’ll be good. (Most of the exceptions have both, but episodes with both are still generally good.)[/li][li]If Charlie (Philip Akin) is in it, it’s skippable. If he’s the most important character other than Duncan, it should be avoided.[/li][li]If any Watcher (Mortals who know about, and record the lives of, the Immortals) other than Joe Dawson (Jim Byrne) is in it, it’s likely a mythology episode. (There are a couple exceptions where Joe deals with the IotW’s Watcher.) If that Watcher isn’t Adam Pierson, it’s therefor skippable. Nothing I’d go out of the way to avoid, but nothing I’d go out of the way to watch, either.[/li][li]If Anne (Lisa Howard) is in it, the episode is likely worth watching, but be prepared to bang your head on the nearest wall, especially if it’s a Mythology episode.[/li][li]If there’s any mention of Richie having been killed, or a being called Ahriman, run far away.[/li][/ul]
The one exception to that last is also a partial exception to the first. The last episode of the series is part of the Ahriman arc and makes a deal of Richie’s death, but features Fitz, and is interesting (an It’s a Wonderful Life style story), but not really that great, either.
