Honest to Og Italian

I’ve played at Italian food for many years with good results, but knowing that it wasn’t all that authentic. Then last week I spotted a recipe in the NYT for the Zappa family spaghetti sauce. Made it today. Holy crap! Pork chops, beef, meatballs, all simmered for hours (well, not the meatballs). Hugely filling, but molto beni! I’m hooked, but this is a dish you can only do about twice a year. I’d be interested in some other authentic dishes, if you have them. I don’t want to post the NYT recipe, as I don’t know about copyrights, but you can find it easily.
