Hot Apple Pie With Cheese - And Other Foods That Have Gone Out Of Fashion

Had the occasion, many years ago, of a ham dinner at a very nice Virginia restaurant. Having been brought up on squishy, pink city ham, it was different I didn’t so much slice it into mouth-size bites, as I did cleave it into chunks. Is it always so firmly textured, or was it under-prepared? “Cured with salt” is a gross understatement, the Dead Sea comes to mind when I think of the sensations my taste buds were having. Guess it’s an acquired taste, like bourbon or liver.

What are Tom & Jerrys?

Tom & Jerry:

1.0 oz. Brandy
1.0 each Eggs
1.0 oz. Dark Rum
0.5 oz. Sugar Syrup
1.0 fill with hot Water

Separate egg and beat yolk and white separately. Fold together. Combine with sugar syrup in mug. Add dark rum and brandy. Beat. Fill with hot milk or water. Garnish with ground nutmeg.

I’m not big on drinks with eggs in them, so I’ve never been able to bring myself to try one. And in my two years or so of bartending, I never had anyone come in and order one. Always hoped someone would, though. Looks like a drink that would be more fun to make than to drink.
