How do you like your cranberry sauce?

I made some tonight; i cup sugar, 1 cup water, a sack of cranberries.
Ya’ll sit down.
Mrs. Plant liked it.

She wanted some in a dessert bowl after dinner. I served it with slices of the orange I didn’t put in, thinking it was going to be a bit tart to eat by itself.

She put Reddi Cream ™ on it.

I don’t eat cranberry sauce, but Mr. Bunny can’t live without it. Last year I made the mistake of purchasing the “whole berries” variety. He ate it to be polite, a sad, pained look on his face the whole while.

In other words, he likes the jellied, can-shaped.

Here’s my cranberry compote recipe:

12 ounce bag cranberries
1 Granny Smith apple
1 thinly sliced onion
1 tablespoon olive oil
1 teaspoon cinnamon
7 or eight allspice seeds
4 whole cloves
1/4 teaspoon cayenne pepper
1/2 cup sugar
1/2 cup water
2 tablespoons freshly squeezed lime juice

Put the oil in a pan and cook the onions long enough to make them limp but not browned. Add the chopped up Granny Smith apple. While they cook a little bit, making sure not to let the apple break down, use a mortar and pestle to grind up the spices and add them. Cook for 3 minutes or so and add the water, cranberries, and sugar. Bring to a boil. In five or six minutes most of the berries will have popped. Don’t go all the way to jelly, you want them lumpy. Take it off the heat and stir in the lime juice. Cool in the refrigerator and there you have it.
