Thanks to this thread I made this for the first time this morning. Was much better than I expected! I didn’t think the bread would crisp up the way it did but it was delicious - and the fried bread combined with the yolk was tasty. The only thing I did differently was fry 2 pieces of bacon first and then I cooked the bread in the bacon fat. Pretty sure that’s a good part of why it was so tasty
That’s like asking why anyone would bother to encase peanut butter in a chocolate coating when you could just as easily eat a spoonful of peanut butter at the same time as you’re eating a chocolate bar.
