I just sample some-not bad! Same crunch as your teeth pop the little eggs-and the taste is pretty close to the rel thing. Given the cost of the real stuff, I find the synthetic stuff quite acceptable. I was also wondering: this stuff looks like sturgeon caviar, can they make synthetic salmon caviar?
Cavi*Art does indeed make a salmon “caviar”. Their vegan synthetic caviars are made of seaweed.
Ferran Adria makes an Apple Caviar. I don’t know if it’s the same process as fake caviar.
