as long as the wheels are spinning, the bike wants to stay upright. the geometry of the fork/front wheel keeps it pointed straight as long as he doesn’t lean in either direction; on a bike/motorcycle you turn at speed by leaning into the turn, not steering.
as for speed, he probably has something like a Cramp Buster to hold the throttle open.

BUT they are doing mono’s which removes the self -correcting effect of the front wheel … When air (Not just wind, there are density differences… the road surface heats up the air or cools it, and the other vehicles make turbulence… and heat… ) causes disturbance, there is no reason for it to be corrected , except by the rider trying to reverse it when he notices it.
When the bike starts to lean while doing a mono its dangerous to bring the front wheel down … the bike is not traveling in the same direction as the front wheel is facing and it doesn’t happily re-establish its control…
Riding a motorbike no hands is fairly safe… some bikes do get tank slapper in bumpy conditions going to fast… (speed wobbles basically.)
