I have procured gorgonzola creamosa - help me use it!

I was totally susceptible to the dastardly sales pitch at Whole Foods this weekend - they were giving out samples of fancy dancy gorgonzola creamosa (or cremosa or cremoso, according to my Google search). It’s a PDO cheese from the Piedmont region, and it is rarely imported because it’s hard to ship, if the sample lady is to be believed. Anyway, it’s very very creamy, with a gentle but noticeable gorgonzola kick.

So, I have about four ounces. The sample I tried was spread on a fruit and nut cracker and drizzled with honey. Very good, but I’d like to try something different too. I just had a bit mixed in with my scrambled eggs and it was delicious.

The good news is I don’t have to share because no one else in the house likes blue cheese. So my remaining four ounces could well do for a few different applications.

So lay your gorgonzola recipes on me. I’ll be happy to report how they turn out!
