I just had couscous for the first time. . . give me a recipe!

It has some bell peppers of various colors in it, chick peas, onions and raisins. It’s got a little spicy hotness to it also. Damn, it tastes great!

How do you cook it? Give me some recipes!

My coworker makes this for us…so good, and the first time for couscous for me, too. The recipe is from The Barefoot Contessa
cookbook. Lots of stuff, but really quick to make.

Curried Couscous

Combine
1-1/2 c couscous
1T unsalted butter
1-1/2 c boiling water cover tightly, soak 5 minutes, fluff

Whisk together
1/4 c plain yogurt
1/4 c olive oil
1 t white wine vinegar
1 t curry powder
1/4 t ground tumeric
1-1/2 t salt (kosher if you’ve got it)
1 t black pepper
and pour over the fluffed couscous, mix with a fork

Add
1/2 c grated carrots
1/2 c minced fresh flat-leaf parsley
1/2 c dried currants (or raisins, or dried cranberries…even cherry flavored ones!)
1/4 blanched sliced almonds
2 scallions, thinly sliced (the white and the green parts)
1/4 c small-diced red onion

Mix together, serve at room temp. She usually makes a double recipe of the sauce because it really absorbs it.

I like to add seeded, diced tomato, crumbled feta and mint to couscous.

Your local supermarket probably has it in the ethnic foods section. “Near East” brand is excellent- they make several different flavors. My favorite is Roasted Garlic & Olive Oil.

Buy it in bulk, much cheaper than boxed. You gotta get teh proportion of water:cous cous right. Simply boil the water, pour it on the couscous and cover for 5-10 minutes.

I make this for lunches:

2 1/4 cups boiling water
1 1/2 cups couscous

1/3 c mint
1 cup peas
1/3 c sliced red onion
2/3 c chopped/crumbled feta
3 T toasted pine nuts

2 T lemon juice
1/2 t salt
2 T olive oil
1 1/2 T Lemon Zest
1/4 t cayenne

-pour boiling water over couscous, cover it up.
-dump in other ingredients
-pour liquid stuff over it. Mix it up.
-pour in pine nuts just before serving
I like it warm, but recipe says serve chilled.
