I made the best sweet chicken tonight.

I’m diabetic and need to lose weight, so I’ve been eating low carbs lately. Tonight I was planning on sauteeing some chicken thighs, when I discovered that my blood sugar is running a little too low. So I decided to throw in some carbs.

Pineapple chunks, a handful of raisins, some grated fresh ginger, minced garlic, a little Splenda and cinnamon. Just enough carbs to keep my blood sugar reasonable . . . and it tasted great! I can think of all sorts of variations with stuff like mandarin oranges, peaches, mangoes, coconut, cashews.

This is the big challenge of a low-carb diet: making the food interesting while keeping the carbs on a reasonable level.

Two other thoughts jump to mind.

Mole’s got a certain amount of carbohydrate, and there are any number of Mexican treatments for chicken that it could help with.
Also look into the African preparations that use peanut butter. Pretty tasty.
