I wouldn’t want a sharp cheese with that so I’d use a blend of asiago, cheddar and, oh, gouda cheese.
I wonder if a nice Provolone would compliment that? I’d consider it.
Any fresh, full-fat cheese will be fine. Paneer or queso fresco would work.

You’ve got a cream sauce, you don’t need a cheese as well. A nice tomato, onion, basil and mozzerella salad on the side would be perfect though.
If you have the spice and flavor already, and just want the cheese “ambiance,” mozzarella works fine. It melts well and blends with everything. Don’t over-complicate it!

I’d say bleu cheese or something like that, to balance the spice.
