I need a low-fat recipe for my wife's birthday cake

My wife & I are doing the Weight-watchers thing and she’s being pretty religious about counting points.

Tommorrow is her birthday and I’d like to make her a cake. The cake-mix-in-a-box stuff is probably no good and I know that icing is out.

I need a good tasting recipe for low-fat, low calorie cake (or some other good birthday dessert).

Angel food cake. I don’t think you’ll get any lower fat than that. You can put a light glaze on it and it’s delish. It’s very low in WW points.

I don’t have a recipe but type in “angel food cake recipe” into Google and I’m sure there will be some there.

Don Mauer is the guy who writes the lean and lovin it column in many newspapers - and his recipes are very very good.

I have no idea how you’d count the points, but I’ve used boxed chocolate cake mix and instead of adding oil, I used 1/2 cup of unsweetened applesauce. It was moist and yummy and tasted just like a chocolate cake.

I have a recipe that’s quick, easy and incredibly low-fat:

  1. Put four cups of flour in a bowl
  2. Add water
  3. Mold into the shape of a cake
  4. Bake

Oh wait, you said “good-tasting”. Huh. I guess you could throw some Skittles in there or something. I think they’re pretty low fat.

Hmm… if you don’t mind pie instead of cake, I like the WW Key lime-pie recipe.

Reduced fat graham cracker pie crust, 2 small boxes of lime sugar-free jello, 2 containers of lime or lemon yogurt, and 12oz(i think?) of cool-whip free.

Hmm… the details are elduing me right now. I think you mix the Jello with like a cup or hot water, then while still hot mix in yogurt and cool-whip. Fold into crust and chill.

Somethign like that, anyway.

1 box Angel Food Cake Mix
1 can (20 ounces) crushed pineapple

Preheat oven to 350 degrees (F). Mix two ingredients together and pour into angel food cake pan. Bake for 40-45 minutes until dark golden brown. Don’t underbake.

Turn the pan immediately upside down on a glass bottle until cool. Slide knife around the pan to remove the cake.

Cut into twelve slices, each slice is 3 points. Add whipped topping (or even frost the cake with whipped topping) for hardly any more points.

(This can also be baked in a 9x13 pan, for about 25-30 minutes)
