“Enough” thick cut bacon or panchetta, cut into 1/2"-1" pieces
Handful of italian parsley, chopped roughly
Some pasta in corresponding amount to the olive oil.
Cook pasta. Fry bacon in olive oil. Gently cook parsley briefly in bacony olive oil. Toss all that shit together and eat it.

The original recipe idea is a Nigella Lawson one, if I recall correctly, but it’s one I’ve internalized to a “toss whatever looks right in the pan” and it’s simple enough to reward that.
I should try it with different pig-based products–the panchetta experiment was amazingly good.
