My wife has decided we (I) will make Ice Cream Sandwiches for my sons birthday TOMORROW. :eek:
I will be using sugar cookies and Vanilla ice cream as ingredients. Does anyone have experience and tips to help me do this?
Can you add some crumbled Oreos?
I guess I am having a hard time understanding how to put the Ice cream on the cookies without making a mess with melting ice cream. It is not working out real good and I am getting ice cream all over the key board typing this…
Turn the freezer temp to lwest setting so the ice cream is fairly stiff. Then CUT the ice cream in the shape that you want it. Lay it on the cookies and apply a little pressure. Return sandwiches to freezer…remember to return freezer to normal setting.
Here’s what I suggest:
- Pre-make scoops of ice cream, lay them out on a cookie sheet or the counter. Don’t pre-make too many or they will melt excessively.
- Flatten scoops with an appropriate kitchen tool (large spatula, bottom of a pan, large coffee can, brick, shoe) until it is the same diameter as the cookies.
- Pick up the scoop and place it between the cookies. Use bare hands or utensils depending on if wife is observing or not.
- Put the sandwiches on another cookie sheet and back into the freezer to solidify.
If you follow step 1B, you won’t have to worry too much about melting. You can even put the tray of scoops into the freezer until they reach just the right consistency for squashing.
You won’t be smashing the ice cream down directly on the cookie, so hopefully you won’t find out “how the cookie crumbles”
You’ll probably have to experiment with the right size scoop, and the right amount of flattening, but after that it should go smoothly.

To expand on frixxxx’s method: Buy ice cream in cardboard boxes. Then when ready to cut, remove entirety of box, leaving ice cream block. Use heated knife or piano wire to cut slices.

BCE’s instructions are good. You need to have some somewhat soft ice cream to put on the cookies. The put them back in the freezer to get hard. A recent cooking show I watched also added the step of rolling the edges in sprinkles before refreezing for that extra special touch.
Success! Thanks for the suggestions. I managed to figure out the right envirmental conditions for non melting but still workable ice cream. I still think it would have been easier to buy them.
