Interesting. I am a fan of heterogeneity myself, but the example of wedge salad I encountered was more like something that just hadn’t been prepared for eating, but was rather just piled in a heap on the plate. Could be I just got a terrible example of the type, I suppose.
My wife is like the Princess and the Pea when it comes to iceberg lettuce- if there’s just the tiniest shred of iceberg in her sandwich, she can taste it and it immediately ruins the sandwich for her. She pointed out, years ago, that iceberg kind of tastes like dirt, and now I can’t stop tasting it, either. If we’re going to have greens, we both insist on romaine, arugula, or spinach.
I can’t recall seeing buttercrunch lettuce in the supermarket, just Bibb, which to me is small, limp and devoid of taste.
Maybe I should try growing buttercrunch this year.
The classic looseleaf varieties such as Black-Seeded Simpson are both tasteless and a pain to wash.
Wedge salad, such a throwback to the 50’s and 60’s and my grandfather’s favorite when we went out to eat.

My mother used to serve where salad sometimes. I ate it bare, just the wedge of iceberg lettuce. It was by far my favorite salad. (Why no, i am not a salad fan as an adult.) I lived the crunch, and the mild, palate-cleansing taste iyf iceberg lettuce.
You eat it with a fork and knife.
I enjoy a Chef salad (for lunch) made with Iceberg lettuce, Romaine lettuce, ham, sliced eggs, grated cheese, carrots and cucumbers. Ranch Dressing.
I prefer Iceberg lettuce with just a little Romaine in my salads.
I had a house salad at a restaurant yesterday. It contained a couple different kinds of looseleaf lettuce, small chunks of iceberg lettuce, cherry tomatoes, Kalamata olives, pumpkin seeds and hearts of palm. Pretty tasty, and the iceberg supplied necessary crunch.
All three of those taste more like dirt (especially spinach) to me than iceberg. I like crunch and juiciness in a sandwich, and sometimes I don’t want something competing with the other tastes. Iceberg is perfect for that.
