What’s to defend? It’s not actually a term anyone ever uses except to point out how similar it is to “nigger.” Either you’re making a joke about that, or you’re using it as a way to get by saying “nigger” without actually saying it. Likely both.
It’s not as if it even covers a concept that we don’t already have several words for. Stingy, tightass, cheap, miserly, measly, scant, skimpy, pitiful… the list goes on.
The point of using that term instead of those others is just to try and offend people. And doing something solely to offend people is exactly what political correctness is against. It’s not running amok, but working as intended.
Well, first off, you’d have to establish that this is a “political correctness” issue. It’s already been shown in this thread that there are other reasons for this that do not have anything to do with not offending people.
Even if you establish that, you then have to establish a pattern, in order to be able to decry political correctness and to claim its gone amok and is harming society.
Only then does whether or not you are whining come into play.
If you do accept the reasons offered in this thread, that kids unfamiliar with the topic would do worse on assignments, and thus get lower grades, then you’re saying you accept discrimination. I would be perfectly okay with calling that bigoted.
To not be a bigot, no level of discrimination is acceptable. (And, yes, I mean discrimination in the way it is currently used, not “recognizing differences.”) There are no acceptable targets, and there is no amount that is too small to care about.

In fact, I say being a good Christian and not being a bigot overlap greatly. It really does boil down to not loving ourselves more than others. The only difference is that Christianity has it at an individual level, where anti-bigotry has it at a group level. It’s still love your neighbor as yourself.

Around 20 years ago I was the target of an attempted shaming over my stance on SSM. My mistake was supporting SSM. Apparently disagreeing with the local/state LBGT activist groups that were pushing a petition for a badly written partner benefits ballot initiative was the height of bigotry. How dare I take a different position on how to deal with the inequity when I am straight! I should just fall in to line and support them only and exactly how they demanded.
I’ve also been told that discussing how we create gender neutral physical fitness standards, instead of the current gender normed standards, if we’re going to fully implement women in the combat arms was somehow biased. ISTR the word sexist wasn’t used but it was strongly implied.
I wouldn’t describe either of those incidence as strictly political correctness. It struck me as a false dilemma fallacy applied on the top of treating everyone repectfully. I was not fully with their rigid thinking so I was fully against them. Still, I would have found a phrase like “PC run amok” as a clear and concise description that many would understand.
