I'm Going to Screw Up This Rack of Lamb

I bought a frenched rack of lamb at Costco a couple weeks ago and put it in the freezer because I have no freaking idea how to cook it. I’ve never even had rack of lamb before. What was I thinking? I blame Top Chef for making me feel adventurous. Stupid reality TV.

I took it out of the freezer today for cooking tomorrow. What do I do? I am at a loss. Someone tell me it’s easy and I’m not going to botch it. Also, side dish ideas?

No doubt there are thousands of recipes out there. We tend to go for bigger and cheaper roasts at home, so I’ve seldom cooked a rack per se.

If you’re comfortable roasting in an oven I’d say sprinkle a bit of salt on it, brown all the sides and cook it at about 150 degrees C/300 degrees F) for maybe half an hour. Personally I don’t like lamb the ultra rare way the TV chefs insist upon but YMMV.

Personally I’d cut the rack into little chops and just fry or grill them. Maybe 5 minutes a side in a hot pan?

As for sides, just whatever’s in season for you. Don’t forget the gravy.

Season it, cover the tips of the bones with foil, and broil. Of course I like my lamb rare, so YMMV

Don’t worry, it’s really easy. Thaw it completely, mince up some garlic and fresh rosemary with salt and olive oil and rub it all over, cover the exposed ends of the bones with foil, put it on a roasting pan with the fat side on top, and roast it at 400 or so for about 25 to 30 minutes. Goes well with roasted new potatoes, salad, or whatever vegetables you like.

All that’s necessary is to get it hot and put some salt on it. I’d do it on my charcoal grill.

Cooked rare to medium-rare, it’s a joy. Cooked medium or more it’s meh.
