Interesting tidbit about communion wine...

The modern-day fruit juice industry actually began back in 1869 in the Vineland, New Jersey, home of Dr. Thomas Bramwell Welch, where he and his son Charles processed the first bottles of “unfermented wine” for use with the communion service at their church. Of course, the rest is history.

I don’t have a comment on the OP, I just wanted to be able to be the poster to do this (for my first time):

discopants seems to be referring to this staff report: What did the Catholic church use for altar wine during Prohibition?

And then there is the related issue of alternative industries for former alcohol producers. Strohs - which makes beer - made ice cream during prohibition. Strohs still makes the ice cream, although it is hard to find (but well worth it - yowee!). As far as I know, Strohs does not make beer-flavored ice cream.
