I think hummus is fine to leave out for a few hours…or do you mean you’d be carrying the hummus at work all day, then bringing it home?
My Lebanese friends used to leave hummus out on the counter for days on end. They claimed as long as you didn’t mix the olive oil in with it, it was fine at room temperature.
We never got sick or died from it, as far as I recall.
This is the second headline I’ve read wrong in so many days. Yesterday they had breaking watermelons and today Johnny is freezing humans. I just don’t know what to make of my fellow Dopers next. Perhaps I should start a thread…

If it’s the former, I’m going to cautiously go with “No.” But I’m open to arguments.
I just checked my copy of How To Serve Man and it definitely recommends at human flesh be served fresh with minimal aging. It doesn’t say anything about freezing but does suggest that the nervous system signals to the vagus nerve be inhibited so that the subject does not emit excessive auditory signals which typically contain no useful semantic content.

Does the hummus get grainier texture? I don’t like that grainy texture in hummus. I wouldn’t like more of it. I’ve been considering freezing hummus as well since I don’t eat it fast enough before it would spoil in the refrigerator sometimes.
