I knew a fellow who died from bruised bananas. He was driving and saw a fruit stand on the other side of the road. So he pulled over to the shoulder, parked his car, and walked across the road to the fruit stand. He bought a bunch of bruised bananas. As he was crossing back to his car, a mammoth truck hit and killed him.

This, times a thousand. I never make banana bread with bananas that are perfectly yellow and appetizing (the kind you would eat raw). You need the brownest, ickiest, gooiest, almost-rancid bananas for good banana bread. Bonus points if they’re attracting fruit flies.
I’m not sure about this, but I think all or almost all the starch in a fruit has to turn into sugar before the fruit begins to rot versus ferment. This is assuming the fruit isn’t moldy or has a fungus growing.
