Go to a ball game. Take a selfie in front of the scoreboard showing the teams and the score. Hold your ticket where the date can be seen.
If that isn’t good enough, then none of us can show we were here on any given date! Might as well just let the zombies eat you.

As noted, by the OP, 25 years ago, that’s pretty easy to change in the camera, before taking the picture.
Also, I think that there might have been some changes in INS policies and procedures since then.
Starting with the fact that INS no longer exists…

Notary publics are not, “completely unreliable” as far as the law is concerned. Maybe you don’t like them… but it seems to me that INS would have to accept their sig and stamp.
This is exactly the kind of thing NP’s are for. They sign to witness things that can not otherwise be proven authentic.
Get a Notary. Case closed.
When I did my mortgage refi, the notary took my thumbprint. Between that and the dates of the entries in their notary book before and after my notice, I think that should handle things. Assuming they’ve been a notary for awhile and keep being a notary.
I think the INS needs to have so damned good magicians on call.
