Yes, but I think it’s hardly controversial to say that the audience for all these different genres is primarily straight men.
My own completely non-scientific wildass guess is that in traditional heterosexual guy-girl porn, the male actor is a stand-in for the viewer, who is presumably watching the sex with one hand on his laptop and the other on top of his lap, so to speak. Porn of this sort is about male fantasies, after all. So what gets prominence in the cinematography is female actor’s genitals, breasts, buttocks and face, and the male actor’s penis (so the viewer can vicariously enjoy having a big, porn-star cock). How often in porn vids, for example, do you see shots of the male actor’s face? The scene ends with the money shot, because the male viewer has probably by then already had his own orgasm and has lost interest in the video. (I’ve not seen much porn of sufficiently good acting or plot to hold my interest after the bonin’ is done.)

Yes, oral or anal the active partner usually withdraws before ejaculation and finishes externally (usually on his partner). No, that doesn’t usually happen in real life.
