But seriously, the Shawnee moving west in the first half of the 19th century must be what carried the name Chillicothe through Illinois into Missouri, I’m guessing.

Before the advent of factory farming chicken was harder to come by in most cities and was therefore more expensive than pork. So you had recipes like city chicken which were designed to get pork to taste like fried chicken. This is probably what is being referenced there.

2 pieces white bread (the healthier whole wheat white is fine)
Mayo or Miracle Whip I prefer the latter

Are you claiming that this is the recipe for the sandwich that you’ve eaten for decades and which people you know call a Chillicothe sandwich? If so, where and when did you first hear people call it that? Or did you just make up that recipe now?

One of the Harvey girls noticed that Judy Garland‘s character Susan didn’t have any lunch. She didn’t want to embarrass her, and you can see her discuss this fact with the head Harvey lady and a couple of other girls, so they came up with a plan. In order to not embarrass her, she made a big deal about giving another girl the Chillicothe sandwich, the girl purposely turned it down, then they offered it to Judy Garland‘s character pretending that she wanted her opinion of it. The only purpose in this was to give her lunch without embarrassing her. The reason the Harvey girl called it a Chillicothe sandwich is because that is the girl’s hometown…the sandwich was simply a chicken sandwich. The fact that Judy Garland’s character said she always wanted to try a Chillicothe sandwich is funny because there is no such thing.That was Susan‘s way of accepting the sandwich without appearing desperately hungry. She said it tasted like chicken because that’s exactly what it was…she didn’t realize they were passing it off to her in pretending they wanted her opinion when they were really just trying to feed her when she was hungry. This whole scene is simply women seeing someone hungry but not wanting to embarrass her, and a hungry woman not wanting to look desperate or to appear to be begging for food. Watch the movie again and you’ll see all of this play out.
