Salmon Fried Rice!
To be honest, I wasn’t even going for exactly this concoction but I accidently bought more salmon than I needed so I wanted to do something with it.
Last year, I had tried grilling some salmon in our oven’s broiler and I didn’t realize how quickly it would burn. After blowing away the smoke, I tried to salvage what was left. I had some leftover rice and celery that I mixed together and put on top of the salmon as a sort of heat shield and put it back in the broiler. The resulting salmon and rice dish was delicious and made me want to experiment more
So a few weeks ago, I get around to finally trying out a new version of this salmon and celery rice thing. Originally, I was going to grill the salmon (not too much this time) and put it over some celery mixed with rice and green onions, sort of like a fried rice with fish. I thought that would taste ok.
But while I was making the rice, I remarked how similar it was to my egg fried rice. So I tossed in some more celery and green onions, then some grilled white onions for additional flavor. The salmon that I was broiling I decided to mix in the rice. Since it was seperately cooked and seasons with garlic salt and pepper, the saltiness of the fish should mix well with the rice. Also, the slightly charred surface of the fish made the texture contrast rather well with the soft rice and onions. Anyway, I thought I’d share because I’ve never had any kind of fish fried rice before (shrimp doesn’t count).
Ingredients:
1 White onion, diced (not red!)
A couple stalks of green onions, diced
a couple stalks of celery, diced
3 cups steamed Rice
Salmon filet
Garlic Salt
Salt
Black pepper
Olive oil
First, season the salmon filet on both sides heavily with garlic salt and black pepper. It helps to cut it into smallish chunks of about 2x2 blocks. Put that in the a small oven or a broiler. The goal is to slightly char both sides so that it’s a bit crunchy
Heat up some olive oil in a large wok or pan. Throw in the white onions and let them sit for a couple mins. You want them to become soft and a bit brownish. At the same time, I put the diced celery in a bit of water and microwaved them so they get soft. Take that out of the microwave, drain the water, then toss them into the pan with the white onions. Stir fry for a few mins, then remove from pan
The salmon should be flipped so that both sides are slightly crunchy
Now stir fry the rice. You probably have your own way, but I start with some oil, then toss in the green onions. Stir fry that for about a min or two to bring out the flavor, then add in the rice. Mix well. Add in the celery and white onions.
Take out the salmon and add it to the rice. Mix well, breaking it up into smallish pieces. A chunk here or there is ok. Add salt as needed and you’re done!
So now my question, for those of you still here. I liked the taste, and comparing ito my egg fried rice, the only real differene is that there’s no egg in this dish but I added celery. Anything else I can put in there? I was thinking small diced asparagus since that goes with salmon, but I’m not sure how it would go with the rice. Maybe a bit of garlic, but that’s something I can add or subtract easily. How about those tiny salted shrimp? Too seafood-y?
