Just how much of the original Anakin Skywalker is left in that suit?

I was having a gander at this site here:

There are a couple of images there showing Anakin Skywalker in a ‘bacta’ tank but all that is left of him is a head, right shoulder and the arm. (Apparently the artist is showing us the damage cause after the fight with Obi Wan.)

But this brought a question to mind. Are there any references as to just how badly damaged Anakin was after the fight? Was the damage as extensive as these pictures indicate?

Their summary, after reviewing the available evidence:
“… Vader still has original human skeleton in his upper torso, neck, head and possibly parts of his right arm. These sections of his body are probably wholly or substantially original flesh. Several of the neck vertebra seem to have been replaced in order to restore bodily control after a serious spinal injury. Without his cybernetics, Lord Vader reverts to being a quadraplegic. [The evidence] supports (or fails to falsify) the notion that his legs, left arm and parts of his right arm may be artificial.”
