Just made a quiche--what to do with leftover cup of filling?

Made too much. What to do with the overage on short notice?

Make a mini quiche.

Grease a muffin tin and pour the filling in the holes. Bake along with your quiche, although they will get done sooner. Voila – mini crustless quiches. Freeze them and you’ve got a quick breakfast thing.

Make an omelette? :dubious: Probably the simplest and most direct way to deal with it.

What are the fillings? Bacon and cheese? Ham and asparagus? Spinach and tomato?

Pour it into a custard dish, stick it in a water bath, and bake it just like any other custard.

Omelette was my thought, or put it in the oven at the same time as the quiche and make a frittata. Can’t go wrong either way. :smiley:
