I worked at a KFC in high school back in the late 80’s, early 90’s. The Colonel sold his interest of KFC to Pepsi a few decades ago but stuck around for consultation and marketing. The change to KFC occurred sometime around 1991-1992 as they were introducing and marketing chicken that was made rotisserie style so the word “fried” could be a misnomer.
The explanation given to managers and franchisees was the negative connotations that came with the use of the word “fried”.

In 1988 we had an ex-president of Yale University, the former president of Columbia pictures, and a world famous surgeon running Major League Baseball but George Bush and Mike Dukakis running for President of the United States. Are we damned or what?
Believe it or not, it is real chicken. I was a supervisor for five years in a poultry plant that had a KFC contract. the only difference between KFC and the chicken you buy at the grocery is the way it is cut and the amount of QC involved.
It is cut completely by machine instead of by hand, the birds are clamped on cam operated backboards and moved through several cutting stations. They all have to be within a very close weight range to fit the machine correctly, thus the uniformity of KFC. They also cut the breast into three pieces instead of two, slicing one off the top before the breast is split. Thats why a third of KFC breast has only a piece of grissle (keel) instead of any bone.
QC is unbelievable, they even measure skin tears down to a half inch. One of our QC people had to take special training and then pretty much became the property of KFC. He was payed at KFC scale and only answered to them, and he was a pain in the ass. Hope this helps.
