BTW, my gas oven has the broiler inside the oven itself, not the drawer underneath, so it is an option not limited to electrics.
My gas oven has the same setup as voguevixen’s, the broiler is inside the oven itself.
I like gas stoves, but I have serious difficulty in getting a very low heat from them. This is especially true when I use my more heat-conductive pots, like my Calphalon. On occasion, I’ve pulled the “burner” off of a nearby burner and nested it on top of the one I’m using, in the hopes that keeping the pot farther from the flame will cut down on the heat.
I was told this is because the two products of gas combustion are carbon dioxide and water. And the water is what messes up dough.
You only find that now on very few, usually bottom end ranges. Most are now storage like a typical electric range or sometimes a warming drawer… (which I think is useless. Storage is better IMHO)

I have a really old gas stove, and a gas oven. I hate the oven, it sucks. I loved my old electric oven.
But I like cooking on gas better.
My first place out of home was Gas elements, gas stove. I did not enjoy the experience. The oven part was quite temperamental.
My second place was gas elements, and fan forced electric oven. This was perfect. It had a wok burner and was an auto-on gas doover. I liked it, but the smoke detector in the hall was too damn sensitive, so every time we cooked, we had to have one person stand under the detector waving a magazine at it to keep it from going off.
My third (and current) place is electric top and bottom. I cannot stand it. I would KILL for gas cooking. I made one rule when I eventually buy my house. I get to remodel the kitchen the way I want it. I had to give up any option of doing the bathroom in my own special way, but at least it means I can get EVERYTHING just right in my kitchen.
And I’d much rather eat than excrete.
I went to some expense to get gas piped in and a used Wolf stove which I use mainly for pizza and popcorn. Gas is less expensive to use, but it will take 100 years to pay off the difference. I fussed over the new technology, which I understand is very nice, but I stayed with the devil I know.
I wanted a Wolf because I saw one in a rich guy’s place and thought it looked neat. It bakes fine, too.
FairyChatMom: Look closely at the options given. My own mother cooks on a propane stove. The local propane dealerships only provide expensive contract arrangements, in which they stop by every month and charge for the visit. It’s a terrible rip-off in my opinion. Instead, she was able to get a second-hand regulator valve (which no one seems to want to sell, but rather “rent” with a propane contract), and now just exchanges the propane tanks at the local grocery store.
My family’s house has gas everything; the college dorm I lived in last year had electric. I vastly prefer gas. It’s quicker. I don’t bake much but I haven’t had a problem with the oven… and it’s not a new stove by any means. But like I said, I don’t bake much. It’s fine for my purposes. And the oven pre-heats very quickly.
