I wouldn’t call myself “well-versed”, as I haven’t taken Latin in 4 years, but before that I took it for 6. Your phrase means “It is the will of God.”
Pronunciation:
Est (rhymes with “best”) woe-loon-taas day-ee.
“It is the will [or wish] of God”
The pronunciation of est is just as you would expect.Dei is “dayee”. voluntas is “woluntas” in Classical Latin and “voluntas” in Medieval Latin.
The o and u of voluntas are short, the a is long: “woluntarse”
For “Est” I want to say “Eh”, being that I’vbe only seen that word in French. But for some reason when I see it in Latin, I want to say “est”, like “west” with no “w”.
Which would be right?

When I was at school and we were doing Julius Caesar in English class, some dumbass got to read out the famous line “Et tu Brute” and pronounced it “Eh tu broot?” How we mocked him.

You’re both right. In french, “est” (third person “to be”) and “es” (second person) are pronounced with only the vowel making a sound.
In latin, the “s” and the “t” get to talk.
