Leftover mac’n’cheese on its own is… pretty boring. It’s good if it’s leftover tuna-mac or SPAM[sup]®[/sup]-mac. Or mac’n’cheese with ground beef in it, though Mrs. L.A. isn’t really a fan, so I don’t make it. No leftovers.
So yesterday I minced some green bell pepper and some celery, and mixed it in with mayonnaise. Thought about putting some frozen peas in it, but didn’t. Thought about dicing some medium cheddar and putting it in, but didn’t want to take the time. Thought about chopping up a scallion, but forgot. Plain as it is, it’s good. Certainly better than reheated mac’n’cheese on its own.
The wifey puts ground chicken in it. Pretty good. I use sour cream instead of milk, and add a dallop of horseraddish. Even better! Sprinkle with pepper, tony’s, and parmasean, muah! Perfecto!
Use Italian sausage instead of tuna or Spam. Frozen corn in addition to frozen peas. Even better are sugar snap pea pods. Then, the leftovers are good without needing additional help.
I generally turn it into Bachelor Chow, since the only way there is going to be any left over is if the wife is away. Then I’ll toss in whatever meat is in the fridge. Ditto vegetation. Then hit it with a ton of hot sauce and eat it in front of the TV.
Since I discovered Trader Joes Mac N Cheese balls [drool], I treat leftover MnC completely differently. Now, I use an ice cream scoop to scoop out little balls and I fry the balls. You’re welcome.
