We’ve found a place that serves “gobernador(a) de maiz”. It’s a melted cheese & shrimp taco and it’s delicious. Don’t make the mistake of saying the word taco, though. If you say taco, even if you go on to say gobernadora de maiz, you will get a shrimp taco, which is a completely different thing. Even if you have the order written on a card, if you say taco, you will not get the gooey delight that you crave.
