Let's talk about herring

OK, no casserole recipe then. I’ll have to make it when I get some unpickled herring.

Had a can of Crown Prince Kipper Snacks this weekend- plain, no accompaniment. I liked it- though not nearly as much as pickled herring.

Can anyone describe what fresh herring (cooked, obviously- though not pickled or smoked) tastes like?

It’s similar to grilled mackerel or sardines: it’s a darker-fleshed oily fish with what I would describe as a deep flavor. It might be analagous the difference between white meat and dark meat on a chicken, with fish like cod and haddock being the former, and herring and mackerel being then latter.

Pickled herring in the sour cream sauce is one of my absolute favorite foods. The wine sauce is okay… sometimes it’s a little too astringent for me. Vita is the only brand I buy, though I’d give others a shot.

Almost everyone I know balks when they see me eat it. However, I recently got my brother’s wife to try it – she grew up in a very meat-and-potatoes household – and she actually kind of liked it.

I could eat an entire jar of the stuff in one sitting if I wanted. It takes a lot of self-discipline for me not to.

A little off tangent, but this seems the crowd to ask for help.

I’m looking for the name of a product I used to eat as a kid. I’d only heard it called ,“smoked fish”. I thought it might be kipper but that description and the pictures don’t match.

What I remember is intensely salty, dark brown leathery strips ( 6-9" long, 1.5- 2 " wide). If there were bones, they were very fine. Haven’t seen a similar product in any of the stores or online.

Any guesses as to the identity of the mysterious fish jerky?

I know what to do with herring.

Some oatmeal in a plate, coat the filleted herring flesh side down with oatmeal, fry in butter.

I have some smoked sprats in the cupboard. Not herrings, but the last post reminded me that I’ve been tempted to coat them in flour and fry them.

Ohh I love herring! My favorite way to eat them is with dark bread, heavy buttered with sweet butter. A bite of herring, then a bite of bread.
My husband hates them and refuses to kiss me until I brush my teeth.

My Mother makes a salad with them. It has potatoes, beets, herring and onions. It’s chunky and bright red and looks crazy.

I’ve never encountered herring I didn’t like . . . even in Amsterdam, where it seemed I had a different kind of herring at every meal. But my favorite is the “schmaltz” herring I get at a local kosher supermarket.
