Li Hing Pickle Mango

Hawaii residents and other tropical locales, help me out.

I lost my moms recipe for pickle mango (li hing style)

The best approximation I can come up with on a web search is five spice style.

Mainly, vinegar, salt, brown sugar, five spive powder and water.

My moms recipe used rice vinegar, white sugar, chili, salt, li hing and water. Maybe some ther trace stuff, I can’t remember.

I just had to saw up a fallen mango tree and I have bags of the stuff, I can’t bear to see it go to waste.

I remember from my childhood, proportions were everything, get too much of one thing and the mango pretty much sat on the shelf until next season, get it right and it barely lasted past fall.

I have never heard of this, but, man, someone ship me a jar when you figure out how to make it!

I can’t help you, being totally haole and we never MADE the stuff, but I just wanted to say how much I love that stuff. Pickle mango, li hing mui, ume, salty seed, lemon seed. . . Ah.

Update,

My boy, a teenager by all definitions of the word. Just blasted my best peeler by trying to use it in a running garbage disposal.

I suspect he did it on purpose since it happened while I was looking up recipies on the net. I snapped and sent him to his room for an hour too cool down.

But then all became clear. He is now sentenced to peel all the damn mangos without help. (I was peeling 3 to his one)

Does that make me an asshole?

Here is a recipe like the one you remember but without chili. Add to taste maybe.

Goldurn, ouryL, that’s an interesting website. What a lot of interesting dried fruits and seeds for snacking. The Li Hing dried fruit by itself looks tasty. I’m going to Kauai next week and I believe I’ll look for local markets and do a little shopping. I’m already hooked on spam musubi, anything made with lilikoi, and ahi poke, so I believe my addiction to island tastes is well-started.

The mango is all peeled and soaking. I checked the thread for takers but didnt see any later that night.

OK first the warning, some people are allergic to mango. The symtoms are similar to poison ivy.

Next I suggest Trying it with preserved meats. Ono. I like it with salame or pipi kala.

I used jelepenos because I couldn’t find the Hawaiian chili but I was semi pleased with the taste.
