Liquid Smoke recipes please!

I now have two bottles of liquid smoke, yet no recipes to use them for… I’ve been to Colgin’s website and seen their huge database of recipes using liquid smoke, yet it’s poorly organized and I know the recipes are user-submitted so their quality could be considered unverified at best.

What are some of your favorite recipes utilizing liquid smoke? How close (in terms of taste) can I get to authentically-smoked BBQ?

My grandmother made salami using liquid smoke. Unfortunately I lost the recipe.

Basically, not at all. I’ve tried Liquid Smoke and found it to be pretty thoroughly disgusting. My opinion, there’s just no way to get that authentic smokey flavor other than actually BBQing.

I’ve always found it tastes pretty darned authentic, but maybe I just haven’t had enough authentic BBQ in my life.

I don’t use it with a great many things, so I won’t be much help. But, it always goes into a lentil or split pea soup. I generally use the Hurst’s brand, which come with the beans and spices. It tastes good in any soup or stew you might toss a ham hock into.

Homemade Smoked Almonds

  • 1 egg white
  • 2 teaspoons garlic powder
  • 2 teaspoons celery salt
  • 1/2 teaspoon salt
  • 2 teaspoon liquid smoke flavoring (maybe a little more?)
  • 3 cups whole unblanched almonds, toasted and cooled

In a bowl, whisk egg white until foamy.
Add garlic powder, celery salt, salt and liquid smoke; stir until blended.
Add almonds and stir until well coated.
Evenly spread almonds in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray.
Bake at 300 degrees F for 30 minutes, stirring every 10 minutes.
Cool. Store in an airtight container.

I was really skeptical about this recipe but myself, my omnivorous husband and two skeptical-of-vegetarian-food guests hoovered it down.
