A long time ago, a Korean friend of mine made this fantastic cold soup. She said it was a traditional summer soup. If I remember correctly, it was a clear broth with noodles. There were also ice cubes and thinly sliced apple floating in it.
Very refreshing. If it helps at all, she served it with cold rice and Teriyaki flavoured tinned mackerel.

Haven’t heard of this one. Googling around I found a cold cucumber soup which has ice cubes in it. There also seem to be a lot of recipes for a cold noodle beef soup which has apple in it. And a cherry on top!
Now I’m curious. Anyone?
I don’t have any cold soup recipes myself as I usually prefer the hot soups. But that cold noodle one looks intriguing.

Yeah, I normally don’t dig on cold soups. My favourites being piping hot New England Clam Chowder or Whitefish Chowder. But it’s starting to get warm here and sometimes you want something savoury, yet cooling. Like a nice Gazpacho or this frikkin’ Mystery Soup. I’m always on the lookout for a good recipe (hint, hint) and am hoping that Dopers will drop in with some new ones.
Cold Korean Noodles in broth that you described are called Naeng Myun (냉면). There are a bunch of different varieties.
I could only find one for you in English and its the specific variety you already had, but any Korean cook-book should include Naeng Myun. The primary ingredient in all the types is the noodle, which is made from buckwheat.
