Looking for Some Cheap and Easy to Make Healthy Recipes

It’s that time again… Time to make some resolutions. My biggests this year are to get into the gym more often (as in more than never) and to eat healthier.

I refuse to call it a diet per se - if I want a burger or some chocolate, I’m going to have it. I’d like to think of this little experiment as more of an overall lifestyle change. I currently eat out as much as twice a day at fast food restaurants with junky snacks in between. I’m gaining weight at a record pace and feel like crap. It’s gotta change.

The hardest part of all this is the enormous cost of healthier foods. I spent $75 today on enough food to last a few days. Now if I were buying junk, that $75 could have lasted me a few weeks, easily.

So here’s where you - hopefully - come in. I’m look for some recipes. As the thread title suggests, I’d like them to be healthy, cheap, and relatively easy to make. I’m really busy, so I rarely have time to make a long drawn out meal.

Tonight I had broiled salmon doused in olive oil, italian seasonings, and some fat free sour cream on the side for dipping. Side dishes were rice pilaf and veggies again doused in olive oil and finished off with some salt, pepper, and garlic powder - this Italian loves her some garlic!! All together, this meal took about 15 minutes to make and cost around $4 (I already had all the necessary seasonings).

So, what say you, wise dopers. Any ideas?

Asianesque stir-fry! Just cook some protein (chicken, beef, etc.; or if you’re anything like me, tofu) and your choice of vegetables in a little bit of peanut or sesame oil. You can use a more typical soy/teriyaki-ish sauce, or you could go in another direction: sweet but spicy, peanut saucy, and curry-y are all really tasty sauce types. Experiment around with different blends. Serve on top of a little bit of rice, or, if you’re being carb-conscious, tastes just fine without.
