Hey Babeeeeee, 167 pounds today buck naked after working out. Broke the 170 barrier that I’ve been above for far too long. That’s my upper limit. Think I’ll keep this up though and try for getting under 160 and staying there. Sheesh, my brand new summer shorts keep sliding down past my “skinny” ass. I’ll have to check if my sleep apnea has disappeared with the weight loss.
Congrats to everyone losing weight. A medical issue kept me pretty sedentary for most of this year. In the past few weeks I’ve getting more active, working through a lot of a sore joints to get back to reasonable shape. I didn’t gain a pound the whole time, but it’s clear that the fat to muscle ration had changed in the wrong direction. My usual diet is relatively low on carbs, now I’m cutting carbs again, but every time I’ve gone very low carbs I start craving them after a while. I’m sure what I need to do is cut out the processed carbs and stick to real whole grains and fresh green vegetables instead of potatoes and rice.

(BTW, let’s be clear, when I reference my bday suit, it means in the locker room on the scale, not in the gym on the equipment. :eek:)
I was thinking of doing a general weight loss thread. I was inspired by this but I didn’t want to hijack it with too much non low-carb. But if this became a general weight loss thread that might be good.
Still rockin’ it. Went to a grad party yesterday, there was nothing low carb except a platter of pickles. Pulled pork drenched in BBQ sauce, potato salad, chips, fruit, etc. And a boatload of desserts - all manner of cakes and cookies.
I made a small plate of a little of the meat, some cole slaw, and pickles and basically shoved it around on the plate while taking an occasional bite. Ate less than half of what I took, which wasn’t much to start with.
Tomorrow (Monday) is my weigh in day, so I will report back, good news or bad.
Doesn’t matter much to me either way. I think there is already a general weight loss thread, though?

If anyone is interested, breakfast this morning was two burritos: Two Mission Carb Balance (4 g net each) tortillas, 1.5 ‘jumbo’ scrambled eggs, two rashers bacon, 2 tablespoons Pace Picante sauce (1 g carbohydrate), shredded cheese.
I love canned corned beef (not the hash) but although the nutrition label says 0 carbs and sugars per serving, it includes sugar in the ingredient list. I think the deal is that if the amount per serving is small enough they’re allowed to say zero; which lets them cheat a bit by making the serving sizes tiny enough. I emailed Hormel to ask them just how much sugar is in an entire can, not just one serving. If I get a reply I’ll post it here. I hope it’s low enough that I don’t have to worry about it because I’d love some canned corned beef.
You are correct about how some labels get away with “zero” carbs, from what I’ve read. But you’d probably have to eat many servings for it to sabotage your carb restrictions. I am interested in the reply you receive (if any).
That said, you should make a hunk of your own corned beef. It tastes infinitely better, it’s the easiest thing in the world to make, and you don’t have to worry about added sugar.

I made keto biscuits today. 2g of net carbs each. They’re almond flour, butter, eggs, salt, and baking powder. I’m going to experiment with those and see if I can cut in the fat, instead of using melted butter as the recipe called for. Also 2 kinds of fat perhaps, to try and get some flakiness.
All in all, they were very easy to make, quick cook time, decent approximation of bread, and, as you may have gathered, not so great on the biscuit side of things. They generally stay in the shape they were in when you formed them. Some people form them into english muffin shapes, and then make breakfast sandwiches. Despite the changes I’ve already got planned, I would recommend them. Even my pickiest eater liked them. They’ll go into the rotation.
QUESTION FOR DISCUSSION
What are your favorite foods and/or recipes for the low carb lifestyle? I have been egg, bacon, and cheese reliant this far, but am starting to branch out into other areas. Of those three, oddly it’s bacon that I am getting tired of. I didn’t know that was possible!
My next experiment is ice cream. I’m hoping that works out. I’ll share results as I try new things.

A tblsp of cornstarch will add a lot of flake for very little carb. Also, try freezing your fat and then grating it. Freeze again before using.
Then mix your baking soda and corn starch into the almond flour and mix well. Now toss those frozen flakes in there before adding the other ingredients.
This way the baking soda will be stuck along the edges of the flakes as they melt in the oven, giving you all those flake-apart bits you are looking for.
Weigh-in day for me. Down another 4.6 for a total of an even 20 lbs. since the start of this thread.

OK, got a response from Hormel who say:
“When there is less than 0.05 grams of an ingredient it does not need to be listed on the nutrition facts, but it is included on the ingredients label.”
Just to be on the safe side, I’ll presume they misplaced a decimal point and really meant 0.5 grams per serving. Since a serving size is 2 oz that’s six servings per can, which would still only be 3g per can at the most; and probably less. Time to go grocery shopping and buy a bunch.
So how are you eating your canned corned beef. Plain?

Sunny Daze–Here’s how I do ice cream.
1 pint heavy whipping cream
14 oz. can coconut milk (I like Thai brand)
1 tsp. vanilla extract
1/2 tsp. salt
1/2 cup Truvia or other sweetener
(1/2 cup cocoa for chocolate)
Whip the cream in a mixing bowl until it gets thick.
Dump in the coconut milk and vanilla, and mix some more.
Add the salt and sweetener and mix some more.
If you’re adding cocoa, add it last, using a low mixer speed.
I sometimes add 1 teaspoon orange, almond, or peppermint flavoring, and have found crushed macadamia nuts or pecans help.
Freeze it and consume as you like. (It will get pretty hard in the freezer. I guess if you wanted you could use some of those silicon molds to shape it into ice cream bars.)

I’m down about 23lbs now, (I started early) so that’s good.
I’d like to lose another 10-15, but that may be too optimistic, as well as it may be too thin, not sure.
