I have to admit, I’m pretty pumped up about this. I’ve got my entire week’s meals pretty much planned out. I just finished grilling a dozen chicken thighs, and I have a pork tenderloin that I’m going to Instant Pot for dinner tonight. Had a couple eggs for breakfast. Lunches and dinners will be meats accompanied by salads. Cheese sticks or summer sausage available for night time snacks.
I am going to be tracking calories as well as carbs. I want to be cognizant of what I’m eating. Setting me loose to go whole hog (heh) on meats and cheeses without restrictions in place would probably lead to a disappointing outcome.

I needed seafood last night, so I boiled up some prawns, clams, mussels, and andoille sausages in Zatarain’s Crab Boil, lemon, and onion. Oh, and red potatoes and corn. I ate one potato and ⅓ ear of corn.
I don’t think I blew it, but I certainly ate carbohydrates that are not on the diet.
I had a piece of cake today, but have a crossfit workout and a 14 mile bike ride tomorrow (wheelchair basketball tonight, so I think it will be okay ) :).
I recommend cronometer.com for tracking carbs and calories. It doesn’t do Atkins, but you can set it for for rigorous (20 net carbs) moderate (40) or relaxed (50) keto (in your profile).
I’ve had a dicky tummy all weekend, and haven’t felt much like eating. Today I had a cheese quesedilla cuz that’s the only thing that appealed to me in the cafeteria. I will get back up though and rejoin you all ASAP.

I walked home from work a couple of days ago. 4 miles total, a lot of it up hill. I also went for a 1.5 hour walk last night and I’m feeling super energized.
Here is an easy and low carb recipe:
“Broccoli Fritters With Cheddar Cheese”
From the recipe site: “These easy broccoli fritters are made with cheddar cheese and have a hearty toothsome bite! A minimum of ingredients keeps this recipe healthy and low carb too.”
• 8 ounces broccoli, cut into small pieces or chopped
• 1 cup shredded cheddar cheese
• 2 large eggs, beaten
• 2 Tbsp oat fiber or almond flour, or powdered pork rinds (regular flour if not low carb)
• 1 tsp Cajun seasoning
• Thinly sliced garlic (my addition)
• 2 Tbsp of your favorite oil (I eye it)
Preparation:
1.Cut fresh broccoli crowns and stems into 1/2 inch by 1/2 inch pieces. Steam lightly in the microwave or in a steamer. Drain any excess water and dry with paper towels if wet. (If using leftover broccoli, drain well and chop into small bite-sized pieces.)
Method:
1.Toss or stir the broccoli with your flour of choice and the Cajun seasoning to coat. Add the egg and stir. Add the cheddar cheese and stir until thoroughly combined.
Cook:
1.Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan. A non stick pan needs less oil. Drop small mounds of mixture on pan.
2.Cook on one side until the cheese on the top of the patty begins to melt and the bottom is crusty brown, about 2-3 minutes. Flip and cook on the other side until browned.
Word of advice: Don’t turn over until the first side has set and keep the heat on medium. If you have one use a non-stick pan. I also had more than 8oz of broccoli. I basically just did most of a head and adjusted the ingredients accordingly. Enjoy!
By the way - if you are a daily weigh-in person like I am, I recommend getting the Happy Scale app. I love it. I break down what I want my total weight loss to be into small doable milestones. I actually paid the $4.99 to get no ads making it way more pleasant to use.
I’ll be a cheerleader, since I’m cheerleading scootergirl already. I like to plan urban hikes and I like to walk, and the weather is beautiful in the Willamette Valley now, so go go go! We walked somewhere between 3 and 4 miles last night, after I got off work and we discovered the back tire of her Vespa has a hernia and thus the wonderful ride we were planning had to be ditched. I believe I am more of a drill sergeant than a cheerleader, though. Last night I kept up a running patter of encouragement: “Stay focused! Keep the pace up! Do not dawdle gawking at flowers! Focus on the goal! Left! Left! Left, right, left!” Stuff like that.
The problem with this low carb diet for me is that I don’t need to diet at all, and yet I’m pulled along as an unintended passenger. scootergirl is the kitchen gatekeeper and chief cook, so all our meals lately have been light on carbs and heavy on protein and veggies. Between the diet and intense walking, I’m heading for my lightest weight since high school.
I hereby give testimonial that the broccoli cheese fritters are delicious.
Well, I was going to have some Greek yogurt for breakfast but plans changed. I had to make a last-minute drive upstate, I left at 0730 and didn’t get back until 1100 or so. I totally skipped breakfast and by the time I got home I was famished. I had one serving of Wheat Thins with some hummus, a handful of peanuts, and a couple of pepperoni sticks. That didn’t do squat to fill me up so I simmered up some sausage links and had them and a green salad: just some salad mix with a bit of Newman’s Own Caesar dressing. And lots of coffee. I’ve kept everything logged on the MyFitnessPal app. According to it I’m at about 50g of carbs for the day. So far I feel ok, no cravings and my blood sugar is stable.
So, so far so good.
ETA: I weighed myself this AM before shower, so I guess Monday AM will be my weigh-in day.

cronometer.com is awesome. I have over-shot on my carbs. I didn’t realize that nuts had so many carbs. Lesson learned. I think having this tool will really help. ![]()
Sigh. Maybe having dopers’ support will do the trick. I lost 20 pounds in 2014, kept it off until 2017, and then menopause wreaked havoc on my metabolism. I never really changed my eating habits or stopped working out 3-5 times a week, but the pounds crept back. This may be the new me, but I’ve got my daughter’s graduation on June 1 and her party on June 9, so this is good timing if I want to lose a few. Good luck, all!
I should be listed in the “Already have been doing low carb but in the club” group, not the “in” group. I’ve been doing low-carb (or lower carb, at least) since March.
